Heat the olive oil in a large pan on a medium heat and fry the chicken for around 5-10 minutes until browned then remove from pan. 2. Add the onion and garlic and fry for 2 minutes then stir in the harissa paste. 3. Add the apricots, olives, chick peas, chopped tomatoes, stock and chicken to pan. 4. Stir, cover and simmer for 20 minutes. 5.
